Protein Muffins
Ingredients
1 1/2 cup oat bran
1 cup egg whites (about 6 egg whites)
1/2 cup steamed pumpkin
1/2 cup sugar free applesauce with 1/4 tsp cinnamon & nutmeg
2 tbs all natural peanut butter
3 tablespoons of honey
1 banana, mashed
1 cup frozen blueberries
Preheat oven to 180 degrees.
Mix all ingredients together until well blended.
Add the blueberries at the very end so they stay intact.
Bake for 20 minutes.
Let muffins cool on rack then store in refrigerator.
Makes 12 muffins
