Yummy Winter Recipe's

When the cold months hit there is nothing better than sitting down to a nice hot meal to warm you up so this month I have included 2 of my all time favorites to satisfy the craving for comfort food but still ensure you are eating healthily.
Chicken & Barley Soup
6 cups Massel Chicken Stock
1 cup of uncooked barley (washed well and drained)
1diced white onion 
1diced red onion
3 diced stalks celery
4 diced spring onions
3 large minced cloves garlic 
3 cups of diced chicken breast
salt and pepper to taste
½ cup chopped parsley
2 tsp of dried herbs of your choice
Place all ingredients except parsley in a large pot and bring to the boil.
Reduce the heat and stir occasionally for about 30 minutes.
Stir in parsley and serve.
Chicken Curry
500 grams of diced chicken breast
4 cloves of garlic or 1 tsp garlic from jar
1 tsp grated ginger
1 onion
1 cup sliced green and red capsicum
2 tsp curry powder (mild, hot or medium depending on your taste)
1 can of lite coconut milk
¼ cup chopped chives and parsley
Pinch of cayenne pepper
Pinch of tumeric
Sea Salt and ground black pepper to taste
Brown onion, garlic and chicken.
Add all spices and ginger and stir.
Add can of coconut milk and stir.
Add the rest of the ingredients and stir.
Cook over a low heat for 30 minutes until chicken is cooked through.
Serve with ½ cup of barley.
